While we’re more traditionally known for being a smokehouse specialising in authentic low and slow barbecue, burgers are also a big part of The Good Book.

Don’t let memories of botched home barbecues give you the wrong impression – burgers and barbecue are a match made in heaven, and we’re here to tell you why.

Each of our kitchens is fitted with a charcoal pit. Having road tripped around The States at least once a year since 2012, we feel it’s the most authentic to what we’ve experienced out there (there’s nothing wrong with gas, we just prefer charcoal!). Plus, we’re big purveyors of smoke – getting that smokey flavour into the patty itself is always a bonus.

It also means we can be more flexible and move coals around to cook at different temperatures. Juicy Lucifers need to be cooked at a slightly lower temperature for example – as they’re thicker, this stops the outside burning before the inside of the burger is cooked through.
